Rice and Mushroom Skillet with Chicken
I announced my plan to air fry chicken and fry mushrooms, and my husband threw me his mysterious look and I followed him to the kitchen. He proceeded to chop two stalks of celery into small pieces, chopped a few colors of sweet pepper and a few slices of onion into a bowl.
Then, he chopped all the chicken tenders that we had left from a box of chicken strips from Kwik Trip Convenience Center. The package of fresh mushrooms were already sliced. He put half a stick of butter into the frying pan and started filling the pan with ingredients that he had just cut up.
He handed me a box of rice and said, make this. We'll merge them into one pan once the rice is cooked. Meanwhile, he let the pan of vegetables, mushrooms and chicken fry on medium heat. The rice took 25 minutes to cook. It was the Red Beans and Rice variation. This particular flavor, has a slight smoky bean flavor.
Ingredients
For the Rice:
- rice mix
- 2 tablespoons butter
- 3 cups water
For the Vegetables:
- 1/2 stick butter
- 2 stalks celery
- 5 sweet pepper
- 1/4 cup onion
- 1 package fresh mushrooms
- 5 chicken tenders
- 1 tablespoon black pepper
- 1 tablespoon seasoned salt
- 2 tablespoons worchestershire sauce
I took the 3 quart pan out and put three cups of water in it. The rice mix instructions are on the back of the box. There is a recipe for something on it where you mix the meat, and all the rice, plus whatever else together, and cook it together.
We cooked our plus whatever in a separate pan, and mixed them together just before we placed it in our bowls and ate it like a casserole.
My hubby said that if we were not eating it in a bowl, we could take a tortilla wrap and put some shredded cheese in it and put some of the rice mix in the wrap and eat it like a burrito. That will have wait for another time of making it, since we ate it all in one sitting...
