This is a quick and easy meal to prepare. If you love grilled cheese sandwiches then you'll love this one too. Its more up-scale and has great flavor.It's great for lunch or even for dinner. makes 4 servings and cooks in 5 minutes

  • 4 slices multigrain bread
  • 4 tablespoons apricot preserves
  • 4 tablespoons low fat Brie cheese
  • 12 large basil leaves
  • 4 1-ounce slices of low-fat Monterrey Jack cheese
  1. preheat oven to 400 and lightly toast each bread slice
  2. spread equal amounts of apricot preserve onto each slice
  3. now layer each slice with 1 tablespoon Brie cheese,3 basil leaves and 1 slice Monterrey Jack cheese(you can leave basil leaves off til after cooked for a prettier display)
  4. place sandwich (opened faced) on cookie sheet pan and cook til cheese is fully melted about 2 or 3 minutes.

    I wouldn't have thought to combine apricot preserves with brie, but it sounds good! It would be something different to serve my granddaughters. I like the sounds of it!
