Beans & Greens - Super Simple Salad Recipes
The people who say they don't like salad just haven't tasted a good one. Now, you have no more excuses not to eat your veggies. With these simple recipes, only five or fewer ingredients each, eat a new salad every night, without making endless trips to the grocery store or market! Shop for five nights at once without having to worry about how you'll fit it all into your refrigerator -- at the beginning of each set of recipes, I've included a shopping list for your convenience.
Weight Watchers: points listed at the bottom of each recipe.
Green Salads
Grocery List:
- 2 heads red leaf lettuce
- 5 cucumbers
- 11 roma tomatoes
- 2 bottles reduced-fat vinaigrette
- 4 oz package feta cheese
- fresh ground pepper
Easy Tossed Salad
Combine:
- 4 cups lettuce, torn
- ½ cucumber, chopped
- 3 tomatoes, sliced
- 1/4 cup vinaigrette
Top with:
- 1 Tbsp crumbled feta cheese
- Fresh ground pepper to taste
Weight Watchers: 4 servings, 1 pt each
Marinated Cucumbers & Tomatoes
Combine:
- 2 cucumbers, thinly sliced
- 4 tomatoes, sliced
- ½ cup vinaigrette
Cover and chill.
Top with:
- Fresh ground pepper to taste
Weight Watchers: 4 servings, 2 pts each
Feta-ed Tomatoes
Combine:
- 4 tomatoes, sliced
- 1/4 cup vinaigrette
Cover and chill.
Top with:
- 1 Tbsp crumbled feta cheese
- Fresh ground pepper to taste
Weight Watchers: 4 servings, 1 pt each
Easy Green Salad
Combine:
- 8 cups torn lettuce
- ½ cup vinaigrette
Top with:
- 1 Tbsp crumbled feta cheese
- Fresh ground pepper to taste
Weight Watchers: 4 servings, 1 pt each
Marinated Cucumbers With Feta
Combine:
- 2 cucumbers, thinly sliced
- 1/4 cup vinaigrette
Cover and chill.
Top with:
- 1 Tbsp crumbled feta
- Fresh ground pepper to taste
Weight Watchers: 4 servings, 1 pt each
Bean Salads
Grocery List:
- 1 bottle apple cider vinegar
- 3 cans no-salt-added whole-kernal corn
- 3 cans no-salt-added green beans
- 2 cans lima beans
- 1 can no-salt-added kidney beans
- 3 10-oz packages frozen seasoned vegetable blend
- white sugar
- salt
- garlic powder
- fresh ground pepper
Vegetable Salad Marinade
Combine:
- 2/3 cup sugar
- 2 cups cider vinegar
- 1 tsp salt
- 1 tsp garlic powder
- 1 tsp fresh ground pepper
Bring to a boil in saucepan, stirring until sugar dissolves. Let cool. Store in refrigerator, covered, and stir before using.
Corn Salad
Combine:
- 2 cans no-salt added whole-kernel corn, drained
- 1 package frozen seasoned vegetables
- 1/3 cup Vegetable Salad Marinade
Cover and chill at least 4 hours, stirring occasionally. Drain and serve.
Weight Watchers: 6 servings, 2 pts each
Green Bean Salad
Combine:
- 2 cans no-salt-added green beans, drained
- ½ package frozen seasoned vegetables
- ½ cup Vegetable Salad Marinade
Cover and chill at least 4 hours, stirring occasionally. Drain and serve.
Weight Watchers: 6 servings, 1 pt each
Succotash Salad
Combine:
- 1 can no-salt-added whole-kernel corn, drained
- 1 can lima beans, drained
- 1 package frozen seasoned vegetables
- 1/3 cup Vegetable Salad Marinade
Cover and chill at least 4 hours, stirring occasionally. Drain and serve.

Three-Bean Salad
Combine:
- 1 can no-salt-added green beans, drained
- 1 can lima beans, drained
- 1 can no-salt-added kidney beans, drained
- ½ package frozen seasoned vegetables
- ½ cup Vegetable Salad Marinade
Cover and chill at least 4 hours, stirring occasionally. Drain and serve.
