Shrimp Po' Boy Sandwich Recipe
I don't know about you but I love Po' Boy Sandwiches, and the Shrimp Po' Boy Sandwich is the top sandwich on my list. This recipe came about from my love for this sandwich and not being able to buy one where I was living at the time in Matador Texas. The Shrimp Po' Boy is easy to make and I'm sure if you are a sandwich lover like myself it will become one of your go to sandwiches.

Ingredients
- Batter
- 1 1/2 C fine cornmeal
- 1 C Flour
- 2 Tbsp Cajun seasoning
- 2 tsp onion powder
- 2 tsp garlic powder
- 1 tsp paprika
- 3 Lbs medium shrimp, cleaned
- 2 eggs, Beaten
- 1/2 C milk
- to taste Salt and Pepper
- Remoulade
- 1 C Mayo
- 1/4 c Creole mustard
- 1 Tbsp pickle, Chopped
- 2 tsp Tabasco, to taste
- 2 tsp Garlic, minced
- Toppings
- lettuce, shredded
- tomatoes, sliced
- 6 Fresh bread rolls
- Oil, For frying
- Mix all the remoulade Item together, and set aside for a hour.
- Mix all dry batter Ingredients, and spices to gather in one bowl and all the wet in another.
- Dip shrimp into wet batter mix then into dry cornmeal mix. Shake off extra cornmeal mix and fry in hot oil for 2-3 minutes or untill golden brown and shrimp is cooked.
- Slice bread and spread on remoulade add lettuce, and tomato, and handfuls of shrimp. sever with chips or frys, Enjoy
