More about the ladies finger fry

  1. You can replace red chili powder with green chili, or you can use both.
  2. Before you chop make sure that ladies finger is not wet otherwise they will become sticky. After rinsing, wipe them off with clean cloth or absorbent paper to make them dry.
  3. Adding more water to cook and overcooking makes your fry mushy.
  4. You can replace lemon juice with amchur powder.
  5. Chop ladies finger into medium sized pieces, neither too thin nor too thick.
  6. Buy ladies finger by breaking the tail of it. If it breaks, it is good to use. If it just bends, don't buy it.

This dish looks very good. It is such a colorful dish also, and you pictures are excellent. I don't always do too well eating hot, spicy food as I am on a lot of medication, but I could always use a bit less tumeric and red pepper. Thanks for sharing this recipe.
