Some cabbage recipes
Everyone knows that cabbage is a healthy vegetable and make various types of dishes with it. In India we make various recipes with cabbage. Some of my favorite cabbage dishes (Indian recipes) are given here, which are easy to make and also tasty. Read my hub about its various benefits.
Cabbage Thoran (poriyal):
1.Finely chopped cabbage - 250 grams (Cabbage should be washed before chopping)
2.Coconut scrapping - 1 cup
3.Green chillies - 2-3 nos.
4.Chopped onion - 2 table spoon
5.Salt - as per requirement
For seasoning -
Cooking oil - 1 tb.sp.
Mustard seeds - 1/2 t.sp.
Urad dal (optional) - 1 t.sp
Red chillies - 2 nos
Curry leaves - 1 bunch
Method of Preparation -
Coarsely grind 2,3 and 4 items in a mixie, and add it to the chopped cabbage.
Add salt, and mix well with hand, (not with the spoon or spatula), and keep aside.
Keep the cooking tava on the stove and add 1 tb.sp oil and heat it.
Add mustard seeds and let them splutter.
Add other seasoning items one by one in the given order, and add the cabbage mixture.
Cover it up and let it cook on low fire for about 5 minutes. In between turn it up with a spoon 2 times and again cover it up.
Your cabbage poriyal is ready now with all its nutrients in tact.
No water should be added.
it should not be overcooked.
Cabbage thoran goes well with rice, chappathi, and bread.
Other Indian recipes
Cabbage bhajji is a tasty evening snack, especially when you or your spouse return from work or the kids return from the school.
Cabbage leaves - 4 leaves
Green chilly - 1 no. (finely chopped)
Chopped onion - 1 tb.spoon (not finely chopped)
Chopped coriander leaves - 1 tb.sp
Turmeric powder - a pinch
Besan flour - 1 cup
Water - 2 tb.sp.
Salt - according to taste
Cooking oil - 1 cup
Method of preparation
Chop the cabbage leaves in about 1-1/2 inches in length.
Add the onion,green chilly, and coriander leaves. Mix well and keep aside.
Make a mixture of besan flour adding water, turmeric powder and salt to a thick consistency.
Add the cabbage mixture, and mix well.
Keep the cooking tava on the stove, and add oil. When it is heated, reduce the flame and take the bhajji mixture with your hand and put it into the oil little by little about 5-6 times.
When one side is cooked turn them with a spoon or spatula, and cook for 2-3 minutes.
Remove them to a plate where paper is kept at the bottom so that the extra oil will be absorbed.
Eat the bhajjis when they are still crisp, and before they become cold. Those who want can use tomato sauce with the bhajji.
Cabbage salads can be made with cabbage as main ingredient or adding with other vegetables such as carrot, beet root, cucumber etc. Here I am writing about cabbage as the main ingredient.
Chopped cabbage - 1 cup
Chopped onion - 2 tb.spoons
Green chillies - 2 (finely chopped)
Coriander leaves - 2 tb.spoon
Lime juice - 1/2 tsp.
Salt - as per salt
Method of preparation:
Mix all the ingredients well, and keep the bowl in the fridge.
Note: Cabbage Salad should be prepared 30 minutes before serving, to get the best benefit. It should not be prepared early and kept in the fridge.
