Soul Food in America can be traced all the way back to the days of slavery in America. And over the years Soul Food in America has evolved to the point where there is almost a cult following. Over the years I myself have been fortunate enough to be given some of the very best recipes for Soul Food and some great short cuts to turn out some of the best tasting Soul Food you will ever eat.

The Worlds Best Fried Chicken

Back in the days of the old south a chicken was chosen and killed for Sunday dinner. Today you can go to the grocery store and buy your chicken already cleaned and ready to cook. However if you ever get the opportunity to eat free range chicken by all means give it a try because it really does have the best flavor of any chicken. Now here's the recipe for the Worlds Best Fried Chicken.

You will want to start off with a fryer already cut up or chicken leg quarters. You want your chicken to be cool when breaded so wait to the last possible minute before taking it out of the refrigerator.

You will want a good size bowl where you have placed a quart of milk and then beaten four large eggs into the milk. You want your milk and eggs mixed together very well.

Now you want to make your breading.And for your breading your going to need.

4 Cups Self Rising Flour

1 Tablespoon Black Pepper

1 Tablespoon Salt

1 Teaspoon Ground Cayenne Pepper

1 Teaspoon Ground Sage

1 Teaspoon Fine Parsley Flakes

Mix all your dry ingredients in a large bowl making sure they are very well mixed.

Now take your chicken a couple of pieces at a time and place it into the milk/egg mixture. Now remove from the milk/egg mixture and place into your dry breading you mixed and shake bowl to make sure your chicken is well coated. Now it goes back into the milk/egg mixture and now back into the dry breading again. Be sure that each piece of chicken gets double breaded. After each piece of chicken is double breaded place it on a large tray or plate. When you have all your chicken double breaded cover your chicken with plastic wrap and place into the refrigerator for a minimum of 6 hours.

After the chicken has been breaded and has been in the refrigerator for a minimum of 6 hours now your chicken is ready to be fried. If you have a home deep fryer you want your oil at 350 degrees and you will want to fry each piece of chicken a minimum of 15 - 18 minutes. Do not over crowd your chicken in the deep fryer. When your done frying your chicken cut into one of the largest pieces to make sure your chicken is well done. When your chicken is done remove from deep fryer and drain in a pan lined with paper towels.

This will truly be some of the best fried chicken you will ever eat. Be sure to take the time to double bread each piece of chicken. And remember safety and sanitation anytime you deal with chicken. Be sure to avoid cross contamination. And remember to clean any and all surfaces where raw chicken may have dripped with bleach water.

Collard Greens Recipe

Here's a recipe for some of the best collard greens you will ever eat. For your recipe you will need.

Collard Green Recipe

1/2 Pound Smoked Ham Hocks

1 Tablespoon Collard Seasoning, See Recipe Below.

1 Tablespoon Seasoned Salt

1 Teaspoon Ground Cayenne Pepper

1 Teaspoon Sugar

1 Large Bunch Of Collard Greens

1 Large Tablespoon of Margarine

In a large pot combine everything above but your collard greens and let come to a boil. You will want about three quarts of water in the pot. Boil on low to medium heat for one hour.

Wash your collards thoroughly and cut away the stems with scissors. Now cut your collards up into very small pieces and add your collard greens to the pot. Cook over medium heat stirring often for at least one hour. Taste your collards as they are cooking and add more seasoning if you like.

Collard Seasoning Recipe

1 Cup Salt

1/4 Cup Black Pepper

1/4 Cup Garlic Powder

Combine and mix well. This can be used to season almost any greens.

Delicious Cornbread Recipe

Here is the recipe for some of the most delicious corn bread you will ever eat. It goes wonderful with the fried chicken and collard greens above.

Cornbread Recipe

Your going to need.

1 Cup Plain All Purpose Flour

1 Cup Plain Yellow Cornmeal

2 Tablespoons Honey

2 Teaspoons Baking Powder

1 Teaspoon Salt

1 Cup Whole Milk

2 Tablespoons Vegetable Oil

1 Large Well Beaten Egg

Combine all your corn bread ingredients in a large bowl and mix together very well being sure all your ingredients are very well mixed together.

Spray a 8 inch baking pan well with vegetable cooking spray and preheat your oven to 400 degrees. Be sure your oven is hot before you put your pan of cornbread in.

You will want to bake for 20-25 minutes until your cornbread is golden brown and a toothpick inserted in the center comes out clean. Let your cornbread cool in the pan before you cut it out in squares to serve with your fried chicken and collard greens.
