Strawberry Shortcake Cookies
Ingredients
- 2 Teaspoons Lemon Juice
- 12 Ounce (2 Cups) Strawberries, (Hulled and cut into about 1/4 Inch Pieces)
- 1/2 Cup + 2 Tablespoons Sugar
- 1/4 Teaspoon Lemon Zest
- 2 Teaspoons Baking Powder
- 1/2 Teaspoon Salt
- 6 Tablespoons Cold Unsalted Butter, (Cut into small pieces)
- 2/3 Cup Heavy Cream
- Coarse Sugar, (For Sprinkling over the Cookies)
Instructions
- Preheat your oven to 375 degrees and line two baking sheets with parchment paper.
- In a bowl combine, Lemon Juice, Strawberries, and 2 Tablespoons Sugar and set aside for now.
- In a separate bowl whisk remaining Sugar and Lemon Zest together. Rub the Zest into the Sugar until it's Moist. Add in Flour, Baking Powder, and Salt to it until it makes coarse crumbs. Add in Heavy Cream and stir until dough starts to come together.
- Grab the bowl with the Lemon Juice and Strawberries and gently fold it into the dough.
- Use a cookie scoop or a spoon to drop dough onto your baking sheets and sprinkle the Sugar over top. Bake for approximately 10-15 minutes (until they appear golden brown.)
