In Cantonese, "subgum" means mixed or varied. In this recipe for chicken soup, it implies that several different ingredients are used. Besides chicken breast, this soup contains fresh shrimp, bok choy and straw mushrooms.

I also like to add a few snow peas for their bright green colors and their crunch. You could just aseasity add fresh asparagus pieces or frozen peas if you don't have any snow peas. This soup is hearty enough to serve as a light lunch.

This recipe uses a box of chicken broth and boneless, skinless chicken breasts. If you would prefer an even richer soup, start with a whole, split chicken breast instead of the boneless, skinless ones.

It is easy enough to remove the skin and then to separate the meat from the bone using a sharp knife once the breasts are cooked. Simmer the bones in the chicken broth for at least an hour and then strain it before using it.

1-32 Oz.Box of Chicken Broth
½ Lb. of Bok Choy (rinsed and cut into bite-sized pieces)
1 Cup Canned Straw Mushrooms (rinsed and drained)
10 Snow Peas (break off the ends)
½ Teaspoon Salt
¼ Teaspoon Sugar
1 Teaspoon Sesame Seed Oil

Chicken Mixture:
½ Boneless, Skinless Chicken Breast (cut into paper thin slices while partially frozen)
½ Egg White
1 Teaspoon Cornstarch
1/8 Teaspoon Salt
½ Teaspoon Sesame Seed Oil
Mix in a bowl and refrigerate before use.

Shrimp Mixture:
6 Oz. Small Fresh Shrimp (cleaned and cut in half lengthwise)
½ Egg white
½ Teaspoon Dry White Wine
1 Teaspoon Cornstarch
½ Teaspoon Sesame Seed Oil
Mix in a bowl and refrigerate before use.

Cooking Instructions:
- Bring the broth to a boil and add the bok choy, straw mushrooms and snow peas. Cook uncovered for two minutes.
- Add the chicken mixture, turn off the heat and stir to separate the pieces.
- Return the soup to a boil, stir in the shrimp mixture and immediately turn off the heat.
- Finally, mix in the salt, sugar and sesame seed oil and serve hot.
