What mom could fail to be ecstatic when presented with a beautiful breakfast tray on a special day and Eggs Benedict with smoked salmon and chives is a lovely breakfast meal that's light and delicious. The rich hollandaise sauce, lightly poached egg oozing bright yellow yolk and smoked salmon with chives combine to create a culinary treat that will give your lovely mother a wonderful start to the day.

Ingredients

4 eggs

2 English muffins, split in half

2 tbsp white wine vinegar

8 slices smoked salmon

Butter to spread on muffins

Chopped chives to garnish


Hollandaise sauce ingredients

3 egg yolks

2 tsp lemon juice

2tsp white wine vinegar

5oz/125g unsalted butter, diced


Make Hollandaise sauce

First make the Hollandaise sauce.

Put the vinegar and lemon juice into a small bowl and add the egg yolks. Whisk the mixture briskly until it is light and frothy.

Put the bowl over a saucepan of lightly simmering water and continue whisking the mix until it begins to thicken.

Add the diced butter to the sauce mix gradually and whisk continually until the mixture has thickened. If the mix starts to separate take the bowl away from the heated saucepan and continue whisking until it is thick.

Keep the sauce mixture warm until ready to serve your Eggs Benedict.

Recipe

It's easy to poach directly in boiling water if you don't have egg poachers.

Bring a large pan of water to boil and add the white wine vinegar. Turn the heat down so the water is just simmering slowly and stir it to create a whirlpool effect. Lower the eggs one at a time gently into the simmering pan of water and cook for about 4 minutes. Remove the eggs with a slotted spoon.

Lightly toast muffin halves and butter them.

Place two slices of smoked salmon onto each half muffin and slide a poached egg onto each slice of salmon.

Spoon a generous amount of the warm Hollandaise sauce on top of the eggs and salmon and garnish your finished breakfast meal with a sprinkling of chopped chives.
