Swiss Chard with Garbanzo Beans and Couscous
We love chard -- it looks magical and tastes great. Softening the stems in olive oil and garlic really make them stand out. Adding the leaves with the remaining ingredients dissipates their bitterness and leave a soft, delicious flavor while maintaining their bright green color.
Ingredients
- 1/2 cup couscous
- 1/4 cup pine nuts
- 2 Tablespoon extra virgin olive oil
- 4 cloves garlic, thinly sliced
- 1 (12 oz) can of garbanzo beans, drained and rinsed
- 1/4 cup golden raisins, (or dark)
- 1/2 bunch Swiss Chard, stems strimmed
- salt and pepper, to taste
Instructions
- Place the couscous in a large bowl and add 1/3 cup boil water. Stir, cover tightly and let stand for 10 minutes.
- While the couscous cooks, toast the pine nuts in a large skillet over low heat. Toast for 3-4 minutes, shaking the pan frequently. Set toasted pine nuts aside.
- Heat olive oil in the skillet over medium heat. Add the chard stems and the garlic and cook until fragrant, about 3-5 minutes.
- Add the garbanzo beans, raisins, chard, salt, and pepper. Cook for about 5 minutes, stirring occasionally until the chard is tender. Remove from heat.
- Fluff couscous with a fork and place in a bowl or plate. Top with prepared chard, sprinkle with pine nuts and enjoy.
