Fabulous Pizza Pasta Salad

I love pasta! I have a whole section in my recipe box just for pasta. Hot or cold it makes for a delicious meal. In the summer time, I love chilled pasta salad. One of my favorites is Pizza Pasta Salad. It has it's own dressing recipe, and both sausage and pepperoni, not to mention green peppers, onions and mushrooms. It is like a delicious pasta version of your favorite pizza.

I have served this dish both as a main course with garlic bread, or as a side salad dish at barbecues. Every time I make it, I always gets tons of compliments because it is so flavorful and different.

Yields: 4 to 6

Ingredients

  • 1 12 ounce package pasta, any shape
  • 1 medium red onion, sliced
  • 1 medium green bell pepper, diced
  • 1 tablespoon olive oil
  • 2 bulbs garlic minced
  • 2 medium tomatoes, chopped
  • 8 ounces. mozzarella cheese
  • 1/4 pound . cooked, crumbled sausage (I used turkey)
  • 2 oz. pepperoni, sliced in this circles, then halved
  • 1 can of mushrooms, drained
  • shredded mozzarella for garnish
  • Dressing Ingredients:
  • 1/2 cup olive oil
  • 1/2 cup red wine vinegar
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 tablespoons grated parmesan cheese
  • 1/2 teaspoon Italian seasoning (basil and oregano)
  • 1/4 teaspoon dried parsley
  • 1/8 teaspoon crushed cayenne flakes

Instructions

  1. Pasta Directions:
  2. Cook pasta as usual, and dump in a colander. Rinse in cold water until cool, and set aside to drain
  3. In a skillet sear the onion and bell pepper in olive oil over high heat.
  4. Blot the seared onions and pepper with a paper towel
  5. Mix all pasta ingredients in a large bowl
  6. Put all salad dressing ingredients in a bowl, and stir vigorously
  7. Pour dressing over pasta and toss
  8. Sprinkle parsley and parmesan cheese on top as a garnish
  9. Either chill or serve at room temperature
