    How to make a mixed fruit cake?

    I don't have a recipe for a fruit cake as I have never baked one myself and if I am honest, I am not too keen on it. I am more of a chocolate cake fiend myself! However, below is a recipe for a tea loaf, which is similar to a fruit cake, easy to bake and it is yummy!


    Dried mixed fruit - 12oz/340g
    Soft brown sugar - 4oz/113g
    Cold tea - 250ml
    Egg - 1 large
    Self raising flour - 8oz/226g

    Cooking Time - 1 hour - 1 hour 15 minutes at 150 degrees celsius or 130 degree celsius in a fan oven.


    1. Mix the fruit and the sugar together, add the cold tea, cover and soak overnight.

    2. Line and grease a 1lb loaf tin.

    3. Add the self raising flour and the egg to the fruit and mix well

    4. Pour into the tin and put in the oven for approximately 1 hour to 1 hour 15 minutes and share with friends!

    Oh and if you want to be sure it is cooked, insert a skewer at the end of the cooking time, if it comes out clean, then the cake is cooked, if not put it back in the oven for a few more minutes.
