Sorry about the dryness. try adding a little more coconut oil to add in some more moisture. That will add to the sweetness though.
I don't know what recipe you are talking about but you might have used too much flour.
One way to decrease dryness in red velvet cake recipes is to place your pan inside of a pyrex type of bakeware with a little water.... Note, I have never tried this suggestion but this is what I have been told that works.
