What ingredient(s) can I use to soften up a cheesecake recipe?
I made some chocolate cheesecake squares, and the filling part is a little too stiff.
More air in the mixer. You can beat the egg whites with soft peaks, then fold into the rest of the mixture. Be sure not to over cook. The oven should be pre-heated to the right temperture. You may not have to cook as long with more air. Too stiff could be over cooking.
Reduce the cream cheese and add an oil, either vegetable or butter, or a dribble of milk.
Be sure to soften the cream cheese to room temperature and whip with your beaters or processor.
