after the bubbles have stopped going through the air lock, the wine has cleared and the reading on the hydrometer is 1002 for two consecutive days.the question is, the bubbles have stopped the reading is 1002 but the wine is not clear yet, it as been in demi john for seven days, this is a three week wine,if it has not cleared is it o.k. to add stabiliser still ?
You will have to rack the wine. Siphon it to another demijohn and let it to continue to ferment for another 1-2 weeks.
If your wine still does not clear, try adding bentonite to the wine.
