    How are you going to keep the mousse smooth?

    I wonder if the two ingredient should be closer together in temperature.  What do you think?  Might need more time to make it, eh?

    When making a mousse all your ingredients should be at room temperature. When you chill the mousse in the refrigerator it should set up. If you make your mousse in a stand mixer you should never have to worry about it being smooth.
