Below you will find a recipe that should be very close to the recipe you are looking for.
1. 2 lb. chicken breasts
2. 2 ribs celery, cut in chunks
3. 2 chicken bouillon cubes
4. 2 cans (3 oz. each) chunk chicken; shredded fine
5. 2 Tbs. dill pickle relish
6. 2 Tbs. onion, diced fine
7. 1/4 C. celery, minced fine
8. 2/3 C. mayonnaise
9. 1/3 C. sour cream
10. 2 Tbs. Miracle Whip Salad Dressing
11. Lettuce, torn
12. Cheddar cheese wedges
13. 1 tomato, quartered
14. Hard boiled egg halves
15. Extra dressing
Cook chicken breast in enough water to cover with celery chunks and bouillon cubes. When tender, remove from broth. Refrigerate till very cold. Cut into bite-size pieces and combine with canned chicken, relish, onion, celery, mayonnaise, sour cream, and Miracle Whip. Place scoop of salad on lettuce and surround by cheese, tomato and egg.
And I think you will now have a chicken salad very similar to what you are looking for.
