    can you tell me what gumbo is?

    I keep hearing it mentioned, sounds like something you might eat around the scout campfire:)

    it's funny that you mention it, I think I heard this word for the first time today when watching "Hart of Dixie" on Hulu, in the episode, they have  a gumbo contest to see who cooks the best gumbo. i'm still not sure what it is, but it's clearly some type of food...

    A Louisiana soup usually thickened with a dark roux (fat and flour cooked together until it changes color.) There are several varieties but some of the more popular ones are shrimp or seafood gumbo or chicken and sausage gumbo. Most gumbos start with celery, green peppers and onions.

    Gumbo is a Gulf Coast stew or soup started with roux noir, almost always based on the trinity (the Cajun version of mirepoix), traditionally thickened with sassafras file or okra. Other than those elements it can have just about anything in it.
