Lemon and Cilantro Pasta
- 12 ounce box Rotini, rainbow twirls or whole wheat
- 4 ounces feta cheese, crumbled
- 5.75 ounce jar olives, medium-sized
- 1 bunch cilantro, chopped coarsely
- 1-2 cloves garlic, pressed
- 1/2 cup olive oil
- 1 whole lemon, juiced
- 1/4 - 1/2 cup sundried tomatoes, chopped
- 1/4 cup flax seeds, optional
- Cook pasta according to box directions. Strain water from pasta and rinse with cold water. Set aside.
- While pasta is cooking, chop up sundried tomatoes and cilantro. Place in bowl.
- Mix olive oil, garlic, and lemon juice in container.
- Pour pasta into bowl. Add olives, flax seeds, and feta cheese.
- Pour dressing over contents and mix well. Serve immediately or place in refrigerator for later.
