Lemon and Cilantro Pasta

Ingredients

  • 12 ounce box Rotini, rainbow twirls or whole wheat
  • 4 ounces feta cheese, crumbled
  • 5.75 ounce jar olives, medium-sized
  • 1 bunch cilantro, chopped coarsely
  • 1-2 cloves garlic, pressed
  • 1/2 cup olive oil
  • 1 whole lemon, juiced
  • 1/4 - 1/2 cup sundried tomatoes, chopped
  • 1/4 cup flax seeds, optional

Instructions

  1. Cook pasta according to box directions. Strain water from pasta and rinse with cold water. Set aside.
  2. While pasta is cooking, chop up sundried tomatoes and cilantro. Place in bowl.
  3. Mix olive oil, garlic, and lemon juice in container.
  4. Pour pasta into bowl. Add olives, flax seeds, and feta cheese.
  5. Pour dressing over contents and mix well. Serve immediately or place in refrigerator for later.

Being Creative with Pasta

Pasta is a great source of carbohydrates, excellent for providing long-lasting energy. Here is a healthy and delicious recipe with some fabulous ingredients. The homemade dressing is full of flavor and so fresh tasting with the cilantro and whole lemon. This dish is great as a side for a main meal or it also makes a great main dish. Leftovers taste wonderful - I'm always surprised by this. You won't be sorry you tried this one.

Note: If you haven't had flax seeds before, you should. Not only are they really good for you, they are easy to add to several foods like pasta, cold cereal, and oatmeal.
