Lemon Cilantro Baked Chicken Recipe
I love the tart citrus flavor of lemons, and I have a tree full of them right now. I am always looking for ways to incorporate my organic garden fruits, herbs, and veggies into my cooking. Another favorite in my organic garden right now is cilantro which is coming back full force in my small herb garden right now. Each year I let a few of my cilantro plants blot, go to seed then shake out the seeds into my herb garden plot. So, with very little effort on my part, I have a new crop of cilantro coming up.
With all the lemons and cilantro in my little organic garden, I wanted to come up with some recipes that incorporate the two. This lemon cilantro chicken is a bright citrus dish with some pepper kick in it. I hope you enjoy this lemon cilantro chicken as much as my household does!
- 1 to 1 1/4 lbs. thinly sliced Chicken Breast or Chicken Tenders
- Juice from 1/2 a Lemon
- 1/4 tsp. Black Pepper
- 1/2 cup finely chopped fresh Cilantro
- 3 tbs. Extra Virgin Olive Oil
Add chicken to a zip lock or air-tight container. Coat chicken in extra virgin olive oil and lemon juice. Add lemon pepper seasoning, additional black pepper, and finely chopped fresh cilantro. Mix well until chicken pieces are evenly coated with seasoning. Let marinate for 30 minutes to 1 hour.
Preheat oven and a large cast iron skillet to 350 degrees, 5 to 10 minutes. Carefully pull out skillet, and add marinated lemon cilantro chicken to pan in one layer. Make sure not to overlap chicken pieces to ensure even cooking. Alternatively, if you do not have a cast iron skillet you can bake the chicken on a cookie sheet.
Bake chicken in oven for 15 to 20 minutes, or until chicken temperature reaches 165 degrees. (If you use whole chicken breast your cook time will be longer, 30-45 minutes depending on thickness of chicken breast.)
Chicken Cook Time vs. Temperature:
Cook time may differ from oven to oven so ensure your chicken is cooked all the way through by checking the internal temperature with a digital or standard meat thermometer. The internal temperature of chicken should be 165 degrees.
