Lentil Stuffed Peppers-Italian Style (Vegan, Gluten-Free)

Lentils Keep Nicely In a Jar
Total Time: 35 Minutes
Prep Time: 20 Minutes
Clean pepper and boil in covered pot for 15 minutes until semi soft.
This Is How We Do It! - Cook Until Semi Soft: approx. 20 minutes
1 1/2 cups water
1/2 cup lentils (any color)
1/4 cup shredded carrots
1 tablespoon chopped onion
3 tablespoons tomato paste
1 teaspoon garlic paste
1 teaspoon basil paste
1 teaspoon black pepper
1/2 teaspoon salt
*Spoon the al dente lentil mixture into the semi-soft pepper.
Optional: Sprinkle with nutritional yeast for a nice cheesy flavor and finish to party peppers!
*Bake for 15 minutes at 350 degrees
