Quick and Easy Three Bean Salad

Mix Up a Great Side Dish in Minutes

This quick and easy three bean salad is so easy, a monkey could make it! But if you're like me and you don't have a monkey on hand, you too can handle making this delicious recipe.

The three beans I use in my three bean salad are red kidney beans, cannellini beans, and garbanzo beans. Then I add a few ingredients, mix it up, and let it chill at least a half hour or so, but that's not even really necessary.

This versatile recipe can be tailored to your liking. I made up a batch recently to take to a potluck. The three bean salad fits nicely in a jar, as shown, to tuck into a cooler to keep it chilled.

Versatile Salad Recipe

The fun thing about this recipe is how versatile it is. You can choose what types of beans to use as well as the seasonings.

Prep time: 15 min
Cook time: 30 min
Ready in: 45 min
Yields: 6 as a side dish

Ingredients

  • 1 can kidney beans
  • 1 can garbanzo beans
  • 1 can cannellini beans
  • 1/2 onion finely chopped
  • Handful of cilantro leaves chopped
  • 1/3 cup olive oil
  • 1 tablespoon balsamic vinegar
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Open the cans of beans. Pour the beans into a strainer and rinse. Let drain.
  2. Add all of the other ingredients in a bowl. Add the beans and mix thoroughly.
  3. Be sure to taste to see if you need salt and pepper. Some of the beans I use are "no salt added" so those always need a bit of salt.
  4. Cover and chill in the refrigerator for one-half hour or longer if possible. If not, this salad is delicious right away, too.

Olive Oil and The Rest of The Fixings

A delicious olive oil will bind this salad together without being heavy. Add your choice of spices to make this recipe your own.

      My mouth is saying, "I want you now!".....I'm imagining that combo with the zip of the balsamic and the warmth of the cilantro....I guess I really don't know my beans very well, will have to find out what cannellini beans are....now where is that monkey of mine! Delicious and plenty of protein and fiber with flavor...its all good! :)

      Everyone in my family....except me....loves 3 bean salad! For me it's the vinegar that I can't do. You would think I would be ok with just 1 tablespoon of it though.

      I enjoy TWO of the beans in the three bean salad. It's the texture of the gabanzo beans that I don't care for, but this salad is a classic and I can always substitute. :)

      I love thee-bean salad, but I've never made this recipe. (I use green, wax, and kidney beans in mine.) I'm going to try yours, cuz I love all the beans you use.

      I am allergic to beans so would probably end up with a swollen mouth and lips if I ate it, but my mother is a vegetarian and this would be perfect to make for her. I am always stuck for ideas for vegetarian food, so this is perfect. Thank you!
