   My neighbor just cut down her mint plants and gave me a large quantity of mint leaves. I've been making tea with them, but I was wondering what else I could make or how I could preserve them so they don't go to waste?

   If you strike a couple of the leaves by placing them lightly on a sandy loose soil, or by using a powdered root hormone and then plant them in a terracotta pot, then you will always have fresh mint on hand and not have worry about preserving it.  Mint is easy to strike and can be grown from leaf cuttings.

   Wash them, chop them, dry them, freeze them in baggies.
   If peppermint, blend them with milk, cream, and sugar, and make mint ice cream or smoothies.
   If spearmint, put them in curry or fried rice.

   If you hang them in loose bunches in a dry area they will dry well too.

   You can make mint jelly, there's a recipe in every cookbook.

      Yes.... Of course, excellent choice! 
      Do you think your neighbor would give you a nice lamb to roast, to go with the Mint Jelly?

   Throw a few leaves in a water pitcher with a sliced orange and lime.  Great summer drink.  Refresh in a few days with new leaves, fruit.

   Thank you all for your wonderful suggestions!
   It's a great idea to strike a few but I've learned from my neighbor to keep it potted.
   I really like the mint ice cream/smoothie, I'm definitely going to make that!!!! And drying some will help me out too.

   i toss fresh mint in salads, with potatoes and other veggies.....they give it a nice change of flavour.   And...then my fav is to use them in a mojito...mmmmmm......
