Holle's Spiced Low Carb Muffins
GREAT low carb bread!
If you’ve been reading my latest articles, you know that I’ve been experimenting a lot lately with low carb recipes. I’ve tried lots of low carb foods. Some were delicious, while others weren’t. Since bread is my weakness, I’ve worked on several low carb recipes for low carb bread. Yes, I’ve tried store-bought low carb bread, but I haven’t been very impressed with most of them. I enjoy cooking and making up my own original recipes, including low carb recipes, so I decided to create one for low carb muffins.
My low carb muffins are a great low carb bread choice. The texture is nice, and they have a sweet, nutty taste. They’ll also fill your kitchen with the wonderful smells of cinnamon, ginger, and cloves. The main ingredient is flax meal, or flaxseed meal. Flax meal is one of the best friends you can have on a low carb diet!
What’s so great about flax meal?
Flax meal, also called flaxseed meal, makes wonderful low carb bread. The brand I use has 4 grams of carbs per serving, but it also has 4 grams of fiber per serving. This means zero net carbs! Flaxseed meal is also super high in fiber and provides healthy omega-3 fats. Flax meal is one of my favorite low carb foods.
For these low carb muffins, I added a little soy flour to improve the texture. Soy flour is also low carb and high fiber. Be sure to include soy flour in low carb foods when you need to replace regular white flour.
Here’s my recipe for low carb muffins:
Holle’s spiced low carb muffins
What you’ll need:
2 scant cups flax meal or flaxseed meal
½ cup soy flour
Tablespoon baking powder
½ teaspoon baking soda
1 cup granulated Splenda
1 teaspoon cinnamon
½ teaspoon ground ginger
½ teaspoon ground cloves
½ cup water
1/3 cup cooking oil
5 beaten eggs
1 teaspoon vanilla
Directions:
Preheat oven to 350 degrees. Spray a standard 12-cup muffin pan with baking spray. I use the kind that contains flour, like Baker’s Joy.
Mix together all the dry ingredients.
Add the water, oil, eggs, and vanilla and mix well.
Allow batter to rest for 5 minutes.
Divide muffin batter among the 12 muffin cups.
Bake for 25-30 minutes.
These muffins are really delicious! Spread them with butter or softened cream cheese. For a real treat, sweeten the cream cheese with a little Splenda first!
Each muffin has only ONE net carb! Isn’t that amazing? You’ll agree once you try my low carb muffins.
