I used to have bee hives, although I don't consider myself an expert on the subject of honey. I think raw honey will will keep for a month (or many months for that matter)with no problem. Honey is, if I remember right, supersaturated. Meaning that bacteria and germs cannot live in it. Honey contains a lot of trace minerals and trace amounts of a lot of other things (all good for you;o) It of course contains sugar as well.
