Cultured foods support a strong immune system by providing beneficial bacteria (probiotics). Probiotics eat up pathogens that make you sick and regulate cells that make up the intestinal lining. When your beneficial bacteria--which outnumber your cells 10 to one--become depleted, holes develop in this lining. This condition is called leaky gut, and it allows food particles and toxins to escape into the blood stream. Leaky gut causes inflammation, disease, and illness. Eating fermented foods as well as foods that contain soluble fiber maintains a healthy population of beneficial bacteria.
