Does freeze drying kill bacteria (good or bad) or does it just preserve the food

    Does freeze drying kill bacteria (good or bad) or does it just preserve the food?

    I want to drink Kefir but it is expensive. I found a freeze dried variety which is much cheaper called YoGourmet Kefir. I just worry that the freeze drying process might have killed off all the goodness. Can anyone clarify for me?

    Freeze drying doesn't kill bacteria, it just prevents the growth and makes them inactive till the time the food's kept in a low temperature once again.
