Most herbs are easy to grow.  Your growing space, location, soil and shade/sun conditions can all be factored to determine which ones are easiest for you to grow in your circumstances.

Mint is easy and once it takes it spreads, so it's a good idea to plant in a pot.  There are many  varieties of mint.  Rosemary and lavender make lovely bushes and produce forever...and the bees come!  And thyme is easy too...so is sage...
actually most herbs are really easy to grow, some needing more space than others.
All the best!  (Basil is great in the summer, in pots or in the garden).  You just plant them and they grow with some water, but never too much.

Rosmary and thyme, of course there is always mint.  If you can't grow that you'll never be successful at growing herbs.  Just remember, grow it in a pot or it will take over your garden.

I like growing basil and oregano. I had better luck with basil and parsley. I like having them fresh on hand near the kitchen for cooking!
