Why Blood was used in Sacrifices
New Covenant as at Jeremiah 31:31-34, Heb 8
Covenants or agreements, have been made, ultimately, a New Covenant was convened, with Christ as Mediator, primarily for spiritual Israel, New Jerusalem, with ALL who are obedient, to benefit. Because the first agreement between God and Adam, resulted in a loss of life, all successive covenants had to factor BLOOD, which represents LIFE.
Genesis 9:4 (New American Standard Bible)
4"Only you shall not eat flesh with its life, that is, (A)its blood.

1. In the first place, a PROMISED penalty of DEATH was communicated to the first human pair, if they disobeyed a simple request [they were not intimidated, not deprived of anything that provided a satisfied, peaceful, loving, future].
2. With the unexpected intervention of a rebel angel [God selectively decides what to foresee, and up to that time there was NO DECEPTION, no lie, no negatives], the
disobedient act was met with the expulsion of Adam and Eve from God's protective care. This resulted in a progressive loss of perfection, deteriorating in health, ageing and death, within a day to God, 2 Peter 3:8].
3. From Adam to Moses, people died, based on the inheritance of imperfection from Adam and Eve.
4. After the Mosaic law, TRANSGRESSION resulted in execution, and animal sacrifices foreshadowed the ultimate PRICE for RECONCILIATION of obedient mankind with their Maker.
A perfect life, NEEDED a propitiation, another perfect life. 1 Corinthians 15:45.
Hebrews 9:22-27 (New American Standard Bible)
22And according to the Law, one may (A)almost say, all things are cleansed with blood, and (B)without shedding of blood there is no forgiveness.
23Therefore it was necessary for the (C)copies of the things in the heavens to be cleansed with these, but (D)the heavenly things themselves with better sacrifices than these.
24For Christ (E)did not enter a holy place made with hands, a mere copy of (F)the true one, but into (G)heaven itself, now (H)to appear in the presence of God for us;
25nor was it that He would offer Himself often, as (I)the high priest enters (J)the holy place (K)year by year with blood that is not his own.
26Otherwise, He would have needed to suffer often since (L)the foundation of the world; but now (M)once at (N)the consummation of the ages He has been (O)manifested to put away sin (P)by the sacrifice of Himself.
27And inasmuch as (Q)it is appointed for men to die once and after this (R)comes judgment,
