I started watching hockey in 1986, so I haven't seen many of the greats from the past.  I know a lot of people will automatically say Martin Brodeur, but I believe his stats are the byproduct of the Devils defensive trap.  You could have put anyone in net for the Devils between 1995 and the lockout, and they would have had a sub 2.00 GAA.  In my opinion, Patrick Roy was better.  I saw him during the 1986 playoffs as a rookie lead the Canadiens to the cup with some awesome play in net.  After that, he was phenomenal for many more seasons, and even beat Brodeur for the 2001 cup.  He still holds most playoff goaltending records and that is a lot more important than regular season stats where Brodeur has the edge.
