A Recipe For Amish Friendship Cinnamon Apple Bread
This is a (delicious, so I'm told) recipe for using Amish friendship bread starter. This recipe uses instant vanilla pudding mix, apples, pecans, and raisins. It is good, but I am not a fan of cooked apples! I also did not like the pecans, apples, and raisins together.
I was introduced to this kind of bread when a friend gave me a loaf of chocolate friendship bread. I found this recipe when I hunted down the recipe for the starter. I didn't make this recipe for quite a while because it just didn't sound good to me. I have a friend I gave the starter and recipe to and she loves it. She calls me every time she makes it to let me know she did not make chocolate!
Ingredients:
2 cups all purpose flour
1 cup white sugar
1 teaspoon baking powder
2 teaspoons baking soda
1 - 3 ounce package of instant vanilla pudding mix
2 teaspoons cinnamon
1 cup chopped pecans
1 cup peeled, cored, and chopped apple
1 cup raisins
1 cup Amish Friendship Bread starter
1 cup vegetable oil
4 eggs
2 teaspoons vanilla extract
3 loaf pans, 9 x 5 inches
Directions:
Preheat oven to 325 degrees F. Lightly grease the loaf pans.
In a large mixing bowl stir together the flour, sugar, baking powder, baking soda, cinnamon, and pudding mix.
Add the starter, vegetable oil, eggs, and vanilla to the dry ingredients and mix together thoroughly.
Add the pecans, raisins, and apples and mix together. This is where you may want to add more or less of the pecans, apples, and raisins. Or leave one or two out all together. I do not like the combination of all three together, so after my first try with this recipe I started leaving out the raisins when I make it. To replace the raisins I add a little more pecans and apples, about 1/2 cup more of the two mixed together. (I have only made this recipe a total of four times over the years.)
Pour the batter into the loaf pans. Bake about an hour. It is done when a toothpick inserted into the middle of the loaf comes out clean. Let the loaves cool in the pans for about 10 minutes before removing from pans.
