Depends what floats your boat. Some people might like the Dungeon experience - bit trashy / Disney for me. Some like shopping. Personally I can't beat Westminster Bridge and the Houses of Parliament. The views, the 'being there' experience.
The London Eye is a good way to see the city from a bird's eye view. The lineups can be long. From there you can walk to Big Ben and Parliament and Westminster Abbey. Camden Town is worth a visit when the market is on. The Tower of London and Buckingham Palace are also worth visiting.
