Chicken for Dinner Again? Try This Easy, Delicious Recipe

Satay recipes originated in Indonesia and generally describe marinated, skewered and grilled meat served with a peanut or other spicy dipping sauce. Here are two great recipes for the grill: Chicken or Pork Satay and Shrimp Satay.

These easy, dinner recipes are healthy and delicious and can be cooked on the grill or in the oven.


Satay Peanut Sauce

INGREDIENTS:

  • 1 TBSP creamy peanut butter (preferably a natural variety)
  • 2 TBSP hot water
  • 2 tsp juice of a fresh lime
  • 1/4 C. of marinade sauce

DIRECTIONS:

  1. Stir peanut butter and hot water together until smooth.
  2. Stir in the lime juice and marinade sauce. Mix well.
  3. Refrigerate until serving.

Recipe for Chicken or Pork Satay

INGREDIENTS:

  • 1 pound chicken or pork tenderlion, cut into 1/4 inch thick slices
  • 1/3 cup soy sauce ( I use the low-sodium stuff)
  • 2 sliced green onions
  • 3 TBSP Sriracha or other hot chili sauce
  • 3-4 TBSP minced fresh cilantro
  • 3 TBSP brown sugar
  • 2 TBSP sesame oil
  • 2 tsp garlic, minced

The Chicken or Pork Satay Recipe

DIRECTIONS:

  1. Cut chicken or pork tenderloin into thin slices, about 1/4 inch thick.
  2. Place sliced meat into a bowl or zip-lock bag to marinate.
  3. Combine the next 7 ingredients in a bowl.
  4. Set aside 1/4 cup for the dipping sauce.
  5. Pour the remaining marinade over the meat and refrigerate for at least 2 hours.
  6. Meanwhile soak wooden skewers in water and make peanut dipping sauce (see above.)
  7. Thread chicken onto skewers, about 4 per skewer. Discard used marinade.
  8. Cook skewers on preheated grill for 3 or 4 minutes per side.
  9. Serve with the peanut dipping sauce, rice, vegetables and sauce for your dinner. Yum!

Shrimp Satay Sauce

INGREDIENTS:

  • 1/2 tsp minced garlic
  • 3 TBSP soy sauce
  • 1/3 C. creamy peanut butter
  • 1 TBSP brown sugar
  • 1 TBSP juice of a fresh lemon
  • 1/3 C. hot water
  • 1 tsp Sriracha or other hot chili sauce

DIRECTIONS:

  1. Mix together the garlic, soy sauce, peanut butter, brown sugar and lemon juice in a food processor.
  2. Slowly add hot water until blended.
  3. Add chili sauce, use more or less as you prefer.
  4. Refrigerate until serving.

Shrimp Satay Dinner Recipe

INGREDIENTS:

  • 1/4 C. soy sauce
  • 1/3 C. peach or apricot jam
  • 1/2 tsp minced garlic
  • 24 jumbo shrimp, peeled and deveined

DIRECTIONS:

  1. Mix together soy sauce, jam and garlic in a food processor.
  2. Pour marinade over shrimp in a bowl or zip-lock bag.
  3. Marinate in refrigerator for 2 hours.
  4. Meanwhile soak wooden skewers in water and make peanut dipping sauce (see aside.)
  5. Thread shrimp onto skewers, about 4 shrimp per skewer.
  6. Cook skewers on preheated grill for about 2 minutes on each side. Shrimp should be firm.
  7. Serve with the peanut dipping sauce as an appetizer or with rice, vegetables and sauce for your entrée. Enjoy!
