Easy Potato Salad
It was a pretty hot day yesterday, so I decided to clean up the BBQ after it's winter slumber and cook up some nice chicken wings I got from my local butcher. With any BBQ a salad is customary in our house, so I whipped up this nice easy potato salad to go with the marinated chicken.
Ingredients
1 kg Potatoes
1 cup Spring Onions (scallions)
1/2 Red Onion
1/2 cup Gherkins
1/2 cup Mayonnaise
2/3 cup Plain Yoghurt
3 Hard Boiled Eggs (or 4 smaller eggs)
2 Rashers of Bacon
1 tsp Sweet Paprika
Method
Peel the potatoes and cut into 2 cm (1 inch) cubes and cook in a large pot of boiling water until just tender, don't overcook. Now drain and leave to cool*
Slice the bacon into thin strips and fry in some oil until crispy, once cooked to your liking drain on some paper towel to get rid of the excess oil.
Place the eggs into cold water and bring to the boil slowly. I then turn off the heat, place the lid on and let them sit in the hot water for around 12 - 15 minutes and you'll get a perfect hard boiled egg.
While the potatoes are boiling, the bacon is frying, and the eggs are resting, slice the spring onions (scallions) into nice little rounds and finely dice the red onion and gherkins. Place them into a bowl and set aside.
In another bowl mix together the mayonnaise and yoghurt until smooth.
In a large serving bowl, combine the potatoes, onions and gherkins and fold through the mayo/yoghurt mixture. Top with the eggs and bacon strips, sprinkle the paprika over the salad and serve at room temperature.
*tip - to get a tastier salad, mix the mayo/yoghurt with the potatoes when they're still warm, the potatoes will soak in all that flavour.
