Homemade Vegetable Beef Soup Recipes

It's that time of year

It's that time of year again when you mind starts to turn to big pots of aromatic soup bubbling on the stove. There's nothing better than a big bowl of hot soup, a small salad and a piece of french bread with a thick smear of butter on those days that are slowly becoming a little nippy. I can hardly wait for fall to come so I can start pulling out all of my soup and stew recipes. The recipes are so good that I just can't keep them to myself. I hope everyone enjoys them. Vegetable Soup Recipes

Quick vegetable beef soup

Ingredients:

2 lbs stew beef cut into smaller pieces

1 onion, chopped

4 celery stalks, sliced thin

2 bags frozen mixed vegetables

2 cans diced tomatoes

1 can beef broth

1 1/2 to 2 cups prepared noodles

Directions:

Place 4-6 cups water into soup pan, depending on how chunky you like it.

Add all ingredients and cook on low for 3/4 hour.

Add noodles and cook for 15 minutes more.

Vegetable with Beef Soup

 Ingredients:

1 soup bone

4 to 5 carrots, sliced

5 stalks celery, sliced

1 large onion, chopped

2 cans (14.5 oz) diced tomatoes

1/2 head cabbage, coarsely chopped

1 clove garlic, diced

salt and pepper

Directions:

Cook soup bone in enough water to cover the bone.

When meat on bone is tender, remove bone from water, remove meat from bone and place back in broth.

Add vegetables and cook for 25 to 30 minutes on low.

Add salt and pepper to taste.

While vegetables are cooking cook noodles following directions on package.

Add noodles to vegetable beef soup and simmer for 10 minutesmore.

Vegetable soup with a little beef

Ingredients:

1 lbs stew meat, cut into small pieces

1 can carrots, drained

1 can peas, drained

1 can corn, drained

3 stalks celery, sliced

1 onion, chopped

2 cans diced tomatoes

1 can beef broth

1 pkg onion soup mix

1 clove garlic, minced

3 larged potatoes, chopped

salt and pepper

3 cups water

Directions:

In soup pan place stew meat, celery, onion, garlic, diced tomatoes, beef broth, onion soup mix and water.

Bring to a boil and then simmer for about 2 hours, until meat is tender.

Add potatoes, corn, carrots, peas and salt and pepper and simmer for another half hour or until potatoes are done.

Homemade Vegetable Beef Soup

Ingredients:

2 1/2 - 3 lbs stew beef, cut into small chunks

6 medium potatoes, chaopped

5 carrots, sliced

1 onion, chopped

5 stalks celery, sliced

1 can corn

1 can green beans

2 cans diced tomatoes

1 bell pepper, chopped

1 pkg onion soup mix

salt and pepper, to taste

Directions:

Spray bottom of soup pan with spray oil and brown beef.

Combine all ingredients and cook on low for about 3 hours.

Vegetable Beef Soup with an Italian Twist

 Ingredients:

1 1/2 - 2 lb stew beef, cut in small pieces

1 tbsp oil

1 onion, chopped

2 cups chopped broccoli

1 can Italian green beans, drained

1 can corn, drained

5 carrots, sliced

5 stalk celery, sliced

1 clove garlic, minced

2 cans diced tomatoes with garlic, basil and oregano

1 can beef broth

3 cups water

salt and pepper

Directions:

Heat oil in soup pot and brown meat, onion, and garlic.

Add 3 cups water and beef broth and simmer as you cut up vegetables.

Add vegetables to beef mixture and simmer for an hour.

It is a cold and rainy day...well, cold and rainy for Northern California that is. Your soup recipes sound devine and I am undertaking the Homemade Vegetabe Beef with an Italin twist recipe you share.

By the way, I think your suggestion to use spray oil in the bottom of the pan for browning the beef is a very good way to keep the calories down and the healthy aspects high! Very tasty hub! Up and awesome.
