Lemon Shrimp Scampi Over Pasta

Easy and Inexpensive Way Of Making Shrimp Scampi

 

Ingredients

1) 2 lbs of either cooked or raw shrimp

2) 2 cups good white wine or cooking wine works to

3) 1 ½ lbs pasta ziti or angel hair

4) 1 ½ sticks of butter could use low salt of low fat

5) ¾ of a cup of olive oil

6) 3 cloves of garlic

7) Grated cheese

8) Roasted red peppers optionally

9) 1-Tomatoe

(Small Jar of Capers Optional)

First thing is to use Good olive oil. Use a deep frying pan and heat slowly ,then Put your Chopped Garlic In the oil ,only for short time tip (you don’t want to burn your garlic it Will make The dish Bitter).

 Then add your roasted red peppers and 1 1/2 sticks of butter and Capers on A low Heat ,while your Doing This, boil the water for the pasta, while you are Prepping ,it will Save you a lot of time, now add either the raw Shrimp Or the cooked shrimp to The pan.

 And Then add your white wine to it, and simmer for about (10 to 12 Minutes if its raw Shrimp )Until Shrimp has a nice Redish color to it, if its cooked shrimp 6 to 8 minutes ,Then The final Thing To do is add your diced tomatoes and squeezed Lemon,and top with your Grated Cheese, Then take the pan of scampi and pure it over the pasta I like to only use half Of the Pasta.

 First pure some scampi sauce in  pan,then add more pasta and add the rest of it over That, This will insure There’s no dry Spots in the pasta ,stir lightly and serve. Enjoy, The cost is About 15.00 for 4 Adults.
