We all have those days where we just don't feel like cooking anything , maybe its just too hot or we don't feel too good yet don't want to buy take away or weare trying to stick to a budget while still enjoying our meals ..
Or maybe you are a very busy Hubber / worker who doesn't have a lot of time to spend time in the kitchen cooking !
Here are some easy recipes we do here in the caravan !
The kind of recipe where you can make extra to put away for your non cooking days.
When I was cooking for a family of 5 macaroni cheese was a big favourite and easy to do which everyone liked occasionally so I will include that here as well.
Learn how to cut a chicken so as to get more value as well as delicious meals !

Stir Fry
A stirfry is easy & a good healthy meal with the benefit of being able to add whatever you like in the way of vegies .
Choose your meat that you fancy or is on special
Pork
Chicken
Beef
Lamb
Prawns
Add as many vegies as you like
Broccoli, Onion, mushrooms , carrots, cauliflower and so on .
You can buy sauces for your stir fry ready made and taste good !
Or you can experiment with diferent flavours like
Garlic - fresh or from a jar
Ginger
soy sauce
curry etc
Either have it on its own or serve with rice

Toast
Toast is a great stand by for lazy day meals !
Tomato on toast

Tuna & Tomato
Bacon & lettuce
Canned Meal mix
Ham & Tomato
Tomato & onion !
Either use a toaster & put the filling on top or make a toasted sandwhich .
If you don't have a toasted sandwhich maker you can use a frypan or a grill.
Garlic Prawns

One thing I enjoy making is pastry triangles
Cheese & Spinich triangles
or Chicken & mushroom
cheese , ham & tomato
or whichever variation you fancy.
For desserts I like to make
Apple & cinnamon triangles .
How To cut A Chicken
Easy Recipes
Macaroni Cheese
I packet of pasta
pinch salt
Cup of grated cheese
Dab butter
Cup of milk
Spoon of flour
If you are feeling really lazy hopefully you have a sauce packet mix which makes this even faster !
Cook the pasta untill it is soft.
In a seperate saucepan melt the butter & stir in the flour milk and cheese.
When happy with the consistency then mix with pasta !
Can add spring onion, bacon, tomato etc for extra flavour and colour !
French Toast
Years ago we had a craving for French toast and had it a lot !
There are diferent methods , however we loved it with cinnamon
Ingredients:
- 3 slices bread
- 1 egg
- ¼ cup milk
- Small amount cinnammon to taste
Method:
- In a large bowl, whisk egg and milk until well combined. Preheat a non-stick frypan to medium-high heat.
- Dip each slice of bread in the egg wash until coated on both sides , sprinle with cinnamon,
- and put straight into frypan.
- Cook for 2-3 minutes each side until golden and separates easily from frypan.
- If the bread is sticking to the pan, cook a bit longer.
If you don't add cinnamon you can eat it plain or try it with something else you like.

Sausage Rolls
Sausage rolls of other homemade pastries always go down well for a snack and you can vary the recipe to suit your tastebuds.
1 kg sausage mince
6 sheets of puff pastry 1 packet of Continental Chicken Noodle Soup Mix ( or half cup of bbq/ tomato or sweet chilli sauce) 1 egg, lightly beaten (for brushing pastry) 1 onion diced 1 carrot peeled & diced small
Method:
Mix the mince and soup mix/ or sauce together.
Add onion & carrot
Place a long 'sausage like' amount down the centre of 1/2 a sheet of pastry.
Roll into a sausage roll and press pastry edges together. Cut into desired lengths.
Place on oven tray and brush pastry with egg. Bake at 220ºC until pastry is crispy.
Note. You can make any size or style of sausage roll.
