Mom's Zucchini Loaf

Growing up, I was blessed with a grandmother and mother who always grew fresh vegetables. Every spring, we would plant seeds and watch how quickly the plants grew over the months. It was amazing how quickly they produced produce for us to eat. By the month of June, we had zucchini, and lots of it. This is another family recipe, so enjoy!!

Ingredients:

2 eggs

½ cup oil

1 cup sugar

1 cup zucchini, grated

1 tsp. vanilla

2 cup flour

1 tsp. baking powder

1 tsp. baking soda

½ tsp. salt

1 tsp. cinnamon

Beat eggs until frothy. Beat in oil and sugar. Add zucchini and vanilla.

In separate bowl, mix together flour, baking powder, baking soda, salt and cinnamon. Then pour into zucchini mixture. Stir to moisten.

Pour into 9 x 5 x 3 loaf pan. Bake at 350 ° F for 50 - 60 minutes, or until done. Let stand 10 minutes to cool before removing. Cool on rack.

Enjoy as a snack or as a dessert served with fresh fruit compote.

Ooh, one of my favorite recipes! My mom used to make this all the time :) Thankfully, zucchini is such a plentiful crop! It sounds like a strange thing - zucchini in a sweetish bread loaf - but it works so well!
