I often find myself trying to choose who looks the most patient. Since I shop for a family of 8 and use a lot of coupons I think this is important, but maybe I should give everyone a chance and decide afterwards who's nice and who's not.
While having a nice cashier makes the whole checking out thing more pleasant--remember you are the one paying their salary and if you get too much eye rolling or dissatisfied sighs, I would complain to the management.
As a customer, you should be treated with respect and patience regardless of how many coupons you use.
