...And why would you want a cow's gallstone? I imagine they're expensive because the big ones would likely be removed surgically by a vet and the smaller ones... well let's just say sifting through poo isn't exactly a glorious job... (for one you'd have to suspect a cow of having gall stones or else that'd be a failed effort with the sifting!)
As for what they're used for... that probably has something to do with traditional Chinese medicine, I'm guessing based on the fact they use yak gall stones for convulsions and delerium and gall bladders of various animals for different things... ? Maybe.
