    I think it has to do with blocking out distractions or keeping it on coarse.

    As horses can see so much behind them,they are distracted. Movement behind them may cause them to react and bolt,or try to.

    They wear blinders - I think to keep them from being spooked.

    "blinkers" or blinders are used many ways for many reasons. The ones in the picture have them on so that cars do not spook them while on the road. Race horses sometimes wear them so they don't get distracted by the crowd or other horses. Some amish use them as well.
