I think I would take all of them, starting with theoretical physics.

I'd like to take a course in learning any of the six United Nations recognized languages minus English Language of course. I love to speak so many different languages and since I love traveling around, I won't be missing out all that much if I can speak so many tongue.

I'd also take a course in memory to improve my Intelligence Quotient.

Where to begin?  I'd love to learn French, take piano lessons, develop my photography skills, computer graphics, history, forensic science, and anything to do with nature.

History, Philosophy, the Science of Everything, Art, Photography, new languages (Italian, Spanish, French...)there is so much to learn and so little time to do so, but
at least we can look for information and study in our own time...every time to find out how little we actually know:)

Culinary arts or law school. I know that's a weird mix but those are the two things I'd really love to go to school for.

Yeah, that is a unique combination. Feeds both the logical side of your brain and the creative side.

There is a very cool small school in Arizona that teaches long range shooting.  GPS Defense school.  I would love to take all of their courses!

Where to start? I would focus on classes in history and religion which are instructed from the actual sites/areas involved (i.e. Pompeii, Italy, Israel...). Yet I could not stop with just history and religion. I would enjoy classes in the areas of biology and psychology as well. In addition, some weaponry classes, survival and philosophy classes. I would love to learn social cognitive theory from a Stanford professor named Albert Bandura (before he passes-touch wood)...
