Interesting question. He is pure evil I guess and did such cruel, bad and unnatural things to his body to stay alive. I would hazard a guess that his appearance, being without a nose is very snake like. He was descended from Salazar Slytherin and was very proud of this. Snakes have no noses.
Rowling sculpted a character and in her descriptions it seems she wanted to make a character that was not like a human at all. A character so scary and evil, for the reader to imagine must physically look so. Voldermort had slitty eyes and no nose. Two common and recognisables human features.
Just thinking about this question makes you appreciate how clever JK Rowling is to create a whole world like she did.
This is a way more thought out answer than I accepted to get, but I think you're correct. I never sat down and really thought about it I guess. I even at first thought of it as a somewhat stupid question, but you made me realize that it wasn't.
