Three Easy and Delicious Muffins for Kids
The importance of healthy lunches at school.
The kids are back to school and so is my daughter. She is so active and her school activities are so many. So she definitely needs a proper-high vitamin and healthy foods or snacks for lunch. School lunches are a major source of energy for our kids, they spend most of their time in school so it will be great if we can prepare some healthy and delicious snacks for them.
The foods that we pack for our children will give them nutrients they need to learn and play at school. The healthy lunches will help the children concentrate more in class and not feel tired. Here are three easy muffin recipes you may try for school lunch:
Three Muffin Recipes
Strawberry Jam Muffin
Strawberry jam is my daughter's favorite jam, you may replace it with any of your favorite fruit jam. If you give the kids their own favorite food's taste, they will eat their lunches. I always ask her what kind of food she'd like to have for tomorrow's lunch, so I can prepare it today, and usually she'll eat the foods she's asked. It's a deal between us :)
Ingredients
2 cups flour (1 cup = 128 gram)
3 teaspoon baking powder
1/2 cup sugar
1/2 teaspoon salt
1 egg beaten
3/4 cup milk
1/4 cup vegetable oil
1 cup strawberry jam
Instructions
Preheat oven 200 degrees C (or about 400 degrees F)
Stir together : flour, baking powder, salt and sugar. Beat together egg, milk and oil in separate bowl. Pour it to the dry ingredients. Mix quickly and lighty until moist, don't beat. Gently stir in the strawberry jam.
Pour the batter into muffin pan 3/4 height and bake it for 25 minutes or until golden.
Servings : 12
Banana Muffin
Banana is so abundant in my country and also my daughter's favorite fruit. She will never refuse banana. Banana also a healthy fruit, rich in potassium and carbohydrate. Good for kids.
Ingredients :
2 cups flour or all-purpose flour
1 cup cashew nut, bake and chopped
3/4 cup sugar
2 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon cinnamon powder
2 eggs beaten
1/2 cup butter, melted
3 ripe bananas, mashed
1/2 vanilla powder
Instructions :
Preheat oven for 180 degrees C
Mix together in a large bowl : Flour, sugar, baking powder, salt, cinnamon powder, vanilla powder and cashew nut. Stir well.
Mix mashed banana, eggs, and butter. Pour the banana mix to the flour. Stir well, slowly.
Pour the batter into muffin pan for 3/4 height. Bake for about 30 minutes.
Servings : 12
Black Cherry Muffin
Ingredients :
2 cups all-purpose flour
2 teaspoon baking powder
1/2 teaspoon salt
1 cup butter
1 cup sugar
1/2 can black cherry, rinse, sliced.
2 eggs
1/2 teaspoon vanilla powder
125 ml fresh milk
Instructions :
Preheat the oven for 180 degrees C
Mix the dry ingredients, like flour, baking powder and salt.
Mix butter, sugar and vanilla powder until smooth, add egg one by one and mix until well. Add flour mix, stir well.
Pour the fresh milk and stir slowly until well. Add black cherry.
Pour the batter into the muffin pan 3/4 height. Bake about 30 minutes.
Servings : 12
Always bring mineral water, or fresh milk or homemade juice for the kids and add some fruits too. Like apple, grapes, oranges, or kiwis. If possible, cut the fruits, so it will be easy for kids to consume.
