Baked Oatmeal Recipe

This is yummy baked oatmeal recipe that my sister Jennifer makes. Not only is it extremely good for you, It is wonderful on cold days and will leave your home smelling like you have been making cookies all day. It is so easy I'm sure it will become one of your favorites, as it has my mine, and kids love it.

Cook time: 35 min
Ready in: 45 min
Yields: Feeds 6 people

Ingredients

  • 2 1/2 C rolled oats
  • 1/2 C walnut, Chopped and tosted
  • 1/2 c brown sugar
  • 3 tsp ground cinnamon
  • 1 1/2 tsp baking powder
  • 1 tsp salt
  • 1 C Milk
  • 1 Egg
  • 1/2 c applesauce
  • 3 Tbsp Butter, Melted
  • 3 tsp vanilla extract
  • 1 c mixed berries, or dried cranberries, or raisins
  1. Preheat oven to 400
  2. Mix all in bowl well stir in fruit, pour into a 8-inch baking pan that has been buttered.
  3. Bake in preheated oven for 30-35 minutes. let cool, top with more fruit,icing, butter or syrup and Enjoy

      Oatmeal is an excellent power food and indeed very healthy. The only problem is that most people only know oatmeal for preparing porridge without knowing that there are so many ways to prepare oats. Thanks for encouraging the use of oats with such a tasty looking recipe.
