Easy Cheesy Potato Soup

There is nothing better on a chilly afternoon than a bowl of hot soup. Soup is easy to make and only dirties one pot. It truly is a perfect meal. This lens features a super easy potato soup recipe. This cheesy potato soup is made with fresh-cut potatoes and a few 'easy to throw in' ingredients. Be warned...if you make this recipe for a party, make double! People will come back for seconds.

Ingredients:

6-8 medium potatoes
1/2 stick of butter
1 medium onion
1 can cream of celery soup
1 can cream of mushroom soup
1 tsp garlic salt
8 oz cream cheese
1/2 large block Velveeta cheese
1 1/2 cup milk
salt & pepper
parsley flakes

Instead of the soup simmering in the same pot, I like to transfer it to a crock pot before adding the rest of the ingredients. Then it can set and simmer without worrying about it sticking to the pot or cooking too much.
