Making Cranberry Nut Bread

Today I am making Cranberry Nut Bread., My husband needs to have some small gift items ,to pass out to clients as they come into his office. He loves this bread and I thought that others would like it too..Each day I will be making a few things and he will take them in and pass out. I only made the one batch, it smells so good baking I wish I had made more...But I have to move on to some other items..spiced nuts, cookies, etc.

This recipe made up 3 loaves using mini loaf pans..

I wrapped each loaf in plastic wrap, and then white tissue paper..I then slipped them into the cute little gingerbread men bags that I had purchased at Michael's..I wrapped them in the white tissue first, for no other reason than it made the design on the bags more visible...Tied then up with cute little ribbons..and now I will need to attach his business card...I think I will punch a small hole, attach a cord and write the greeting on the back of the card.

Ingredients For Cranberry Nut Bread

  • 3/4 cup sugar
  • 1/2 cup butter or margarine, softened
  • 1 egg
  • 1 tsp. orange peel, finely shredded
  • 2 1/2 cups all purpose flour
  • 1 Tbsp. baking powder
  • 1 tsp. salt
  • 3/4 cup fresh or frozen cranberries, chopped
  • 2/3 cup orange juice
  • 1/3 cup milk
  • 1/4 cup almonds, chopped

Instructions For Cranberry Nut Bread

  1. In mixing bowl cream sugar and butter till fluffy. Beat in egg and orange peel. Stir together flour, baking powder, and salt. Combine cranberries, orange juice, and milk. Add alternately with dry ingredients to creamed mixture, mixing after each addition. Fold in nuts.
  2. Bake in 350 degree oven in a greased 81/2x41/2x21/2-inch loaf pan about 60 minutes or bake in 2: 71/2x31/2x2-inch loaf pans for 45 to 50 minutes; cool in pans for 10 minutes; remove from pans, Cool on wire rack.
