Easy Crock Pot Recipes

Crock pot recipes are always a hit. This white chicken chili recipe is a great way to prepare chicken in a crock pot. It's also super for tailgating or a potluck.
Chicken Chile Verde - An Easy Crock Pot Recipe
2 cans shredded chicken, (9.75 ounce)
1 1/2 cups fresh or frozen corn
2 cans green enchilada sauce, (28 oz.)
1 can Northern white beans, (15 oz.)
7 ounces salsa verde
4 finely chopped garlic cloves
1 small onion, finely chopped
7 ounces diced green chiles
1 handful fresh cilantro leaves, washed and chopped
After you soak the cilantro, then next preheat a pan with 2 tbs oil. Next add and saute the onion, cilantro and garlic for about 2 - 3 minutes. Then add the chicken meat and mix well. Cook for another minute or so.
Then add the rest of the ingredients to the crock pot, which includes the chicken mixture. Stir it all well and set on high and cook for about four to four and one-half hours.

Beef Stew Barbeque Style
3 lbs. beef stew meat
3 tbsp. oil
3 cups beef stock
1 cup sweet onion, chunky slices
1 cup green peppers, chopped chunks
1 stalk celery, chopped
1 dash of cayenne pepper
2 cloves garlic
1/2 tsp. salt
1/4 tsp. pepper
1 can mushrooms, (4 oz.)
1 can tomatoes, (8 oz.)
1/2 cup barbecue sauce
3 tbsp cornstarch
1/2 cup cold water
First saute the onion, pepper, celery and garlic in oil in the crock pot. Next add salt, pepper, beef stew meat, beef stock, mushrooms, tomatoes and barbecue sauce. Cook in the crockpot on low heat for at least 8 - 9 hours. Mix the cornstarch with cold water to thicken all the juicy delicious just before serving.
