Great Breakfast Ideas for on the go!
Busy mornings are no excuse to miss the most important meal of the day. So how can you fit a tasty breakfast into that hectic schedule? Here are some quick and easy breakfast ideas to get you started and on your way:
1. Mom Kat's Famous Ham & Cheddar Cornbread Muffins
- 1 package cornbread muffin mix
- 1 can minced ham
- 1 cup shredded cheddar cheese
Mix the cornbread muffin mix according to the directions. Add the ham and cheddar cheese to the mix. Pour into the muffin tin. Cook according to the muffin mix instructions. Enjoy!
These are a house favorite. I brought some extras to work once and the parents just loved them! They all wanted the recipe. This recipe is great "grab -n- go" food!
2. Mom Kat's breakfast Pizza
- 2 packages pizza crust mix
- 1 pound ground sausage (browned and drained)
- 1 small onion (minced)
- 1 green pepper (cored and diced)
- 6 eggs (scrambled
- 1 can condensed cheddar cheese sauce
- 1 pound shredded mozzarella cheese
- Large non-stick pizza tray/cooking sheet
Combine both packages of pizza dough mix together and prepare per instructions. Spread the dough out evenly on the pizza cooking sheet. Spoon the condensed cheese sauce over the crust. Sprinkle the sausage, egg, onion, green pepper, and mozzarella cheese over the pizza. Bake per pizza crust mix instructions.
My friends and co-workers adore this recipe, as do the children. Make it the night before and give it a quick pop in the microwave on a paper plate for those busy mornings! Fantastic.
3. Breakfast Sandwich
- small pancakes
- round sausage
- cheese slices
- eggs
The day before, cook up some pancakes about as big around as a bagel or English muffin. Freeze them or store them in the fridge. Cook the round sausages either the night before or in the morning (depending on how much time you have).
Scramble 1 egg per sandwich: Beat the egg in a bowl. Pour the egg into a small, hot pan. Flip the egg once it has solidified and cooked on the bottom (as you would with an omelet). Fold the egg in 1/2 then in 1/2 again. If you prefer less egg - simply cut the once folded egg in half and use on 2 sandwiches.
Stack: 1 bottom pancake, 1 egg, 1 sausage, 1 slice cheese, & 1 top pancake.
Heat in the microwave long enough to melt the cheese. * This also works well with bagels and English Muffins. Pancakes are less expensive and keep very well in the freezer.
